Mini Quiche
1 pkg. "Flaky Layer" Biscuits, JUMBO
1 lb. sausage (browned and drained)
2 eggs
1 cup cottage cheese
1/4 c Parmesan cheese
1/4 c chives (finely minced), optional
Combine browned sausage, eggs, cottage cheese, Parmesan cheese, and chives. Separate each biscuit into 2 or 3 pieces. Gently press each piece of biscuit into muffin tins, sprayed with cooking spray. Put filling into each tin. Bake at 375 degrees for 15-20 minutes. (12-15 for mini ones). Let cool a few minutes before removing from the pan.
*If you divide biscuits into 2 pieces you will get 16 quiches, 3 pieces you will get 24. You might play around with the filling amount if you have 24 quiches by adding a little extra cottage cheese and an egg.
I would triple or quadruple the recipe and freeze the extras. You can put them in the microwave for 1 minute and have a fast, filling, great snack.
The Weirdest Enchiladas You'll ever Love
(loved by a picky 20 month old, a man whole hates cottage cheese, a 6 year old girl that is very
wary of any food, and a 65-yr old woman who does not like spicy food)
2 cups refried beans
1 cup (8 oz) cottage cheese
1 1/2 cups (6 oz) shredded reduced fat cheddar cheese, divided
1 Tbs olive oil
4 1/2 tsp flour
1 Tbs chili powder
1/2 tsp garlic powder
1/4 tsp salt
1 1/2 cups water
1 tsp cider vinegar
1/2 tsp dried minced onion
12 flour tortillas (6 inches)
In a large bowl, combine the beans, cottage cheese and 1 cup cheddar
cheese; set aside. For sauce, in a large nonstick skillet, whisk the
oil, flour, chili powder, garlic powder and salt until smooth.
Gradually stir in the water, vinegar and onion. Bring to a boil; cook
and stir for 2 minutes or until thickened. Remove from the heat.
Dip both sides of each tortilla into sauce. Place about 1/3 cup bean
mixture down the center of each tortilla. Roll up and place seam side
down in a 13-in x 9 in x 2 in baking dish coated with nonstick cooking
spray. Pour remaining sauce over top; sprinkle with remaining cheese.
Cover and bake at 350 for 20-25 minutes or until heated through. (I usually cook mine longer 30-35 minutes so it's all bubbly, and then add the cheese and cook 5 minutes more)
